Annapolis & Company Raspberry Muffins
Hi! I'm Mary Beth and I blog over at Annapolis & Company about our life in the midwest with three schooners in tow {as we've dubbed our children}. I love finding the creativity in the mundane of everyday life...and celebrating it. These muffins are sort of our way of celebrating valentine tradition. I'm not really big into candy, but I can down a muffin or two in no time! Perhaps it's because of my love for baking that I would rather eat home baked goodness over candy, but either way these Taste of Home Raspberry muffins fit the bill perfectly. They are easy to whip up {my kind of baking!} and melt in your mouth if you eat them warm. They make perfect valentine treats with the raspberries and white chocolate chips. Enjoy!
Annapolis & Company Raspberry Muffins
//White Chocolate Berry Muffins ingredients: 1 package {8 oz.} cream cheese, softened 1 cup sugar 2 eggs 1 tsp. vanilla 1 1/2 cups flour 2 tsp. baking powder 1/2 tsp. salt 1 cup raspberries, frozen or fresh 1/2 cup white chocolate chips 

process: In a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat well after each addition. Stir in the vanilla. Combine the flour, baking powder, and salt and add to the cream cheese mixture, just until blended. Fold in raspberries and white chocolate chips. Place batter 2/3rds full in greased or paper-lined muffin tins. Bake at 375° for 20-25 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes before removing from pan to wire rack. Yield: 1 dozen.   The schooners were working on some Valentinesy things this afternoon, so in the spirit of love we packaged these darlings up for a few of our loved ones. Don't peek in the window of my kitchen because it is a WRECK, but we cleared a big enough spot on our kitchen table and took some photos of these beauties. They are now all ready to be delivered...
